FLEUR DE LIS BREW WORKS Two Partee brothers, Jon Paul and Craig came together to forge a business partnership. One brother brings fun, brewing experience. The other: vision and drive. Add in Beth and Jennifer, their respective wives and the result is a brewery created from foundation to grand opening in just 16 months.Their beer is brewed with naturally filtered limestone well water offering it a distinct quality not found in commercial breweries. The ultimate goal is estate brewing, where the terroir is evident from ground to farm to grain to glass.

BLACK DUCK CIDERY Blackduck Cidery was a longtime in the making and we had a lot of great help along the way. Our family orchard produces cider, perry and vinegar in small batches with minimal manipulation using ambient yeast fermentation. Small farms producing real food and drink, what a novel idea! ur ciders come from blends of apples grown here in our orchards in the Finger Lakes or from wild/feral local trees. We only use native yeast and take a hands-off, minimalist approach to fermentation. We never add sugar, fine, or filter our cider. Instead, we let the fruit speak for itself, creating unique variation from season to season in our finished beverages.

NEW YORK CIDER COMPANY New York Cider Company, located in the Finger Lakes Region, crafts unique hard ciders using interesting and ripe New York State heirloom and wild apples. We believe in sustainable farming methods and traditional cider-making techniques. Our ciders are fermented naturally, without added yeast, whenever possible. “Wild” fermentations can be riskier; you never know how the natural yeasts will affect the final taste of a hard cider. To us, the rewards of wild fermentation are a worthwhile gamble.

SOUTH HILL CIDER Apples for cider are akin to grapes for wine. They are varieties that most people have not heard of. They are apples, which are grown for their flavor rather than their appearance or ability to withstand storage and shipping. We grow these varieties in our home orchard and we work with other growers nearby. Working directly with other apple growers allows us to impact management decisions that increase the quality of the soil, the trees and ultimately the fruit.
